Preheat your oven to 350°F (175°C). Grease or line a 9x9-inch baking pan with parchment paper for easy removal.
Prepare Wet Ingredients:
In a medium-sized bowl, mash the bananas until smooth. Add the lemon juice, egg, brown sugar, vanilla extract, and vegetable oil. Stir until everything is well combined.
Mix Dry Ingredients:
In another bowl, whisk together the flour, cinnamon, ginger, baking soda, and a pinch of salt. Add the ground walnuts to the dry mixture and stir to combine.
Combine Wet and Dry Ingredients:
Gradually fold the dry ingredients into the wet mixture, stirring until just combined. Be careful not to overmix.
Bake:
Pour the batter into the prepared baking pan and spread it out evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Slice:
Allow the walnut banana bars to cool in the pan for 10 minutes before transferring them to a wire rack to cool completely. Once cooled, slice into squares or bars.
