In a medium saucepan, combine all the ingredients.
Stir well and bring to a simmer over medium heat.
Reduce heat to low and let it simmer gently for 15–20 minutes, stirring occasionally, until the sauce thickens.
Taste and adjust seasoning if needed — more vinegar for tang, sugar for sweetness, or cayenne for spice.
Let it cool, then pour into a jar or bottle. Store in the refrigerator.
