Heat olive oil in a large skillet over medium-high heat.
Season the ribeye steak cubes with salt and pepper.
Add the steak cubes to the skillet in a single layer. Let them sear for 2-3 minutes on each side until they reach your desired level of doneness.
Add the butter, minced garlic, and fresh herbs (if using). Stir the steak bites to coat them in the buttery mixture. Cook for an additional 1-2 minutes for extra flavor and to let the garlic soften.
Remove the steak bites from the skillet and set them aside to rest.
Make the Cheesy Smashed Potatoes:
While the steak bites are cooking, place the baby potatoes in a large pot and cover them with water. Bring the water to a boil and cook the potatoes for 15-20 minutes until they are tender and easily pierced with a fork.
Drain the potatoes and return them to the pot.
Using a potato masher, gently smash the potatoes until they’re slightly broken but still chunky.
Add the butter, cream cheese, sour cream, and shredded cheddar cheese to the mashed potatoes. Stir well until everything is fully combined and creamy.
Season with salt and pepper to taste. Garnish with green onions or chives if desired.
