Oatmeal Bread with Walnuts and Sesame

Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal.

Prepare Wet Ingredients:

In a large bowl, beat the eggs and yogurt together until smooth. Add the olive oil, honey (if using), and vanilla extract, and mix well until combined.

Combine Dry Ingredients:

In another bowl, combine the oats, baking powder, baking soda, and salt. Stir well to evenly distribute the dry ingredients.

Mix Wet and Dry Ingredients:

Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.

Add Walnuts and Sesame:

Gently fold in the chopped walnuts and sesame seeds into the batter. This adds both texture and flavor to the bread.

Bake:

Pour the batter into the prepared loaf pan and smooth the top. Sprinkle extra sesame seeds on top for a decorative finish. Bake in the preheated oven for 45-50 minutes or until a toothpick inserted into the center comes out clean.

Cool and Serve:

Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and serve once fully cooled.
