In a medium saucepan, combine blueberries, water, and lemon juice.
Bring to a simmer over medium heat. Cook for 5–8 minutes, stirring occasionally, until the blueberries begin to burst and the mixture becomes juicy. Mash some of the berries with a fork for your desired consistency.
Remove from heat.
Stir in chia seeds and optional cinnamon or vanilla. Mix well.
Let sit for 15–20 minutes, stirring occasionally. The jam will thicken as the chia seeds absorb the liquid and gel.
Taste and adjust. If the jam isn't sweet enough for your taste, you may add a bit of stevia or monk fruit sweetener.
Once cool, transfer to a clean, airtight jar.
Store in the refrigerator for up to 2 weeks.
