Prepare the Salmon:
Season the salmon fillets on both sides with fine sea salt and freshly ground black pepper.
Cook the Salmon:
Heat the olive oil in a large skillet over medium heat.
Once the oil is hot, place the salmon fillets in the skillet, skin-side down if you prefer skin on. Cook for about 4–5 minutes on the first side until it’s golden brown and crisp. Flip the fillets carefully.
Add the unsalted butter to the pan. Cook the salmon for another 3–4 minutes on the other side, or until cooked through, depending on the thickness of the fillets.
