Hearty One-Pot Texas Cowboy Stew

In a large pot or Dutch oven over medium heat, cook the ground beef until browned. Drain any excess fat.

Add Sausage and Veggies:
Add the sliced smoked sausage and chopped onion to the pot. Cook for 3–4 minutes, stirring occasionally, until onions are softened and sausage begins to brown slightly.

Build the Stew:
Stir in the diced potatoes, canned tomatoes (with juice), and corn. Season with salt, pepper, smoked paprika, garlic powder, and chili powder if using.

Simmer:
Pour in 2 cups of water or beef broth if you prefer a soupier texture. Bring to a boil, then reduce heat to low. Cover and simmer for 25–30 minutes, or until potatoes are fork-tender and flavors have melded.

Taste and Serve:
Adjust seasoning if needed. Ladle into bowls and serve hot.
