Healthy Banana Oatmeal Muffins

Prepare the Oats: In a medium saucepan, combine the oatmeal and water. Bring to a boil, then reduce the heat and let it simmer for 5 minutes until the oats are soft and the water is absorbed. Set aside to cool.

Mash the Bananas: In a large mixing bowl, mash the ripe bananas with a fork until smooth.

Combine Wet Ingredients: To the mashed bananas, add the eggs, stevia sweetener, and vanilla extract. Mix well to combine.

Add Oats: Once the oatmeal has cooled slightly, add it to the banana mixture and stir to combine. Add a pinch of salt and mix until smooth.

Fill Muffin Cups: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease the cups. Spoon the batter evenly into each muffin cup, filling about 2/3 of the way.

Bake: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of the muffins comes out clean.

Cool and Serve: Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. Serve warm or store in an airtight container for up to 4 days.
