Gorgeous Flourless Carrot Cake (Low Carb, No Oatmeal)

Preheat Oven & Prepare the Pan: Preheat your oven to 350°F (175°C). Grease or line a round cake pan (about 8 inches) with parchment paper.

Prepare the Cake Batter:

Grate the carrots finely and set them aside.

In a large mixing bowl, whisk the eggs and honey together until smooth.

Add the grated carrots, ground almonds, cinnamon, and salt. Stir until well combined.

In a small bowl, mix the baking soda with the wine vinegar and then quickly add it to the batter, folding it in to create some fizz.

Bake the Cake: Pour the batter into the prepared cake pan. Smooth the top evenly and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Cool the Cake: Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
