Prepare the Steak: Cut the sirloin or filet mignon into bite-sized pieces and season with salt and pepper.
Sear the Steak: Heat olive oil in a large skillet over medium-high heat. Once hot, add the steak bites in a single layer, searing them for 2-3 minutes per side until browned and cooked to your preferred doneness.
Add the Garlic Butter: Lower the heat to medium, then add the butter and minced garlic to the skillet. Stir the garlic around the steak bites for another 1-2 minutes until fragrant and the steak is coated in the garlic butter.
Garnish and Set Aside: Sprinkle with chopped parsley (optional) and remove the steak bites from the skillet. Set aside.
For the Eggs:
Fry the Eggs: In a separate skillet, heat 1 tbsp of butter or oil over medium heat. Crack the eggs into the skillet and fry to your desired doneness (sunny-side up, over-easy, or hard-fried). Season with salt and pepper.
To Serve:
Plate the garlic steak bites alongside the fried eggs. Serve immediately and enjoy a protein-packed, delicious breakfast!
