Classic Homemade Meatloaf: A Comfort Food Staple

In a skillet, heat the olive oil over medium heat.

Add the chopped onion, red bell pepper, and garlic. Sauté for 3-5 minutes, until softened and fragrant. Remove from heat and set aside to cool.

Mix the Meatloaf:

In a large mixing bowl, combine the ground beef, eggs, breadcrumbs, milk, Worcestershire sauce, and the sautéed vegetables. Season with salt and pepper.

Mix everything together with your hands or a spoon until well combined, being careful not to overmix, as this can make the meatloaf tough.

Shape and Bake:

Preheat your oven to 375°F (190°C).

Transfer the meat mixture to a baking dish or form it into a loaf shape on a lined baking tray.

In a small bowl, mix the ketchup with a little Worcestershire sauce (optional) and brush this glaze over the top of the meatloaf.

Bake for 45-60 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C). If you'd like a more caramelized glaze, you can broil it for the last 3-5 minutes of baking.

Serve:

Let the meatloaf rest for 10 minutes before slicing. This allows the juices to redistribute and makes it easier to cut.

Serve with your favorite side dishes such as mashed potatoes, green beans, or a simple salad.
