Prepare the Chicken: Season the chicken slices with salt and pepper. Heat vegetable oil in a large pan or wok over medium-high heat.

Cook the Chicken: Add the chicken to the pan and stir-fry for 5-7 minutes until it’s cooked through and lightly browned. Remove from the pan and set aside.

Stir-Fry the Vegetables: In the same pan, add the onion, bell pepper, and cabbage. Stir-fry for 3-4 minutes, allowing the vegetables to soften but remain crisp.

Add Garlic and Ginger: Add minced garlic (and ginger if desired) to the vegetables and stir for an additional 1-2 minutes until fragrant.

Combine the Chicken: Return the cooked chicken to the pan with the vegetables and stir to combine.

Add Sauces: Pour in the soy sauce, oyster sauce, rice vinegar, and sesame oil (if using). Stir to coat the chicken and vegetables evenly in the sauce.

Finish and Serve: Continue cooking for another 2-3 minutes, allowing the sauce to slightly thicken and the flavors to meld together. Adjust seasoning as needed with more soy sauce or pepper.

Garnish and Serve: Garnish with sesame seeds and serve hot.
