Preheat your oven to 350°F (175°C) and grease and flour a cake pan (about 8x8 inches or similar size).
In a medium bowl, mix together the flour, sugar, salt, baking soda, and baking powder.
In a separate bowl, whisk together the mashed bananas, eggs, oil (or melted butter), and vanilla extract until well combined.
Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
If you're using walnuts, fold them into the batter.
Pour the batter into the prepared cake pan and smooth the top.
Bake for about 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Make the Topping:
In a small bowl, combine the sour cream, condensed milk, and vanilla extract. Stir until smooth and well combined.
Assemble the Cake:
Once the cake has cooled, spread the sour cream and condensed milk topping evenly over the top of the cake.
Garnish with additional chopped walnuts, if desired.
