Season both sides of the pork chops generously with salt, pepper, onion powder, and garlic powder.
Sear the Pork Chops:
Heat the oil in a large skillet over medium-high heat. Once hot, add the pork chops and sear them for 3-4 minutes per side until golden brown. Remove the pork chops from the skillet and set them aside.
Make the Gravy:
In the same skillet, add the chicken broth, scraping up any browned bits left in the pan. Bring the broth to a simmer and reduce slightly for about 5 minutes. Stir in the heavy cream and adjust the seasoning with salt and pepper to taste.
Smother the Pork Chops:
Return the pork chops to the skillet and spoon some of the gravy over the top of each chop. Reduce the heat to low, cover, and let the pork chops cook in the gravy for about 20-25 minutes until they are tender and the sauce is thickened.
Serve:
Once the pork chops are cooked through and tender, remove them from the skillet. You can serve them whole or slice them before serving. Spoon the creamy gravy over the pork chops and enjoy!
