Preheat your oven to 350°F (175°C). Grease or line an 8x8-inch baking dish with parchment paper.
Prepare the Fruit:
Peel, core, and dice the apples and pears into small chunks. Set aside.
Mix the Wet Ingredients:
In a large mixing bowl, combine the unsweetened applesauce (or mashed bananas), almond milk, vanilla extract, and ground spices (cinnamon and nutmeg). Stir to combine.
Add the Dry Ingredients:
To the wet mixture, add the rolled oats, baking soda, and salt. Stir in the chia seeds or ground flax seeds, if using. Mix until well incorporated.
Add the Fruit:
Fold the diced apples and pears into the mixture, along with the optional chopped nuts.
Bake:
Pour the mixture into the prepared baking dish and spread it out evenly. Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Cool and Serve:
Let the oatmeal, apple, and pear cake cool for a few minutes before cutting into squares. Serve warm or at room temperature.
