In a large bowl, combine the minced pork with salt, pepper mixture, garlic powder, Italian herbs, and grated onion. Be sure to squeeze out any excess juice from the onion before adding it. Mix well until evenly combined.
Form the Meatloaf:
Transfer the mixture into a loaf pan, pressing it down firmly to eliminate air pockets. Alternatively, shape it by hand into a rustic, freeform loaf if you prefer.
Prepare the Glaze (Optional):
In a small bowl, whisk together the soy sauce, honey (or brown sugar), sesame oil, rice vinegar, garlic, and red pepper flakes (if using) until smooth.
Bake the Meatloaf:
Preheat your oven to 180°C (350°F). Place the meatloaf in the oven and bake for about 45 minutes to 1 hour, or until the internal temperature reaches 75°C (165°F).
Glaze the Meatloaf:
About 10-15 minutes before the meatloaf is done, brush the glaze over the top. This adds a glossy finish and enhances the flavor.
Serve:
Remove from the oven and let the meatloaf rest for 5-10 minutes before slicing. Serve with mashed potatoes, rice, or a simple salad for a complete meal.
