Season the pork chops with salt and pepper on both sides.
Make the Glaze:
In a small bowl, whisk together the ketchup, honey, and soy sauce until well combined.
Cook the Pork Chops:
Heat olive oil in a large skillet over medium-high heat. Add the pork chops and cook for 4-5 minutes per side until golden brown and cooked through (internal temperature should reach 145°F/63°C). Remove the pork chops from the skillet and set them aside.
Make the Garlic Glaze:
In the same skillet, add the minced garlic and sauté for about 30 seconds, until fragrant.
Pour in the honey-ketchup-soy sauce mixture and stir to combine. Let it simmer for 2-3 minutes, allowing the glaze to thicken slightly.
Coat the Pork Chops:
Return the cooked pork chops to the skillet. Spoon the glaze over them, turning to coat evenly. Let them cook in the sauce for another 2-3 minutes, ensuring the pork chops are well glazed.
Serve:
Serve the pork chops hot, garnished with fresh parsley if desired. Pair with your favorite side dishes, such as roasted vegetables, mashed potatoes, or rice.
