Follow the manufacturer's instructions to preheat your waffle iron.
2️⃣ Make the Waffle Batter:
In a medium bowl, whisk together chickpea flour, water (or plant milk), nutritional yeast (if using), chopped herbs, olive oil or melted butter, baking powder, salt, garlic powder, and black pepper until smooth. Break up any lumps.
3️⃣ Let the Batter Rest:
Allow the batter to rest for 5-10 minutes. It should be thick but pourable.
4️⃣ Grease the Waffle Iron:
Lightly grease the preheated waffle iron with olive oil or cooking spray.
5️⃣ Cook the Waffles:
Pour the batter into the center of the waffle iron, using the amount recommended by the manufacturer. Spread slightly if needed.
Close the lid and cook according to your waffle iron’s instructions, usually 5–8 minutes, or until the waffles are golden brown, crispy, and steam stops emerging. Chickpea waffles may take longer than traditional waffles.
6️⃣ Remove and Serve:
Carefully remove the waffle using a fork or spatula and place on a plate or wire rack.
7️⃣ Repeat:
Continue with the remaining batter, greasing the iron between waffles if necessary.
8️⃣ Top and Enjoy:
