Crispy Vegan Quinoa Patties – Better Than Meat!

In a small bowl, mix ground flaxseed and water. Let sit for 10 minutes until thickened.

Combine the ingredients:
In a large bowl, combine quinoa, mashed chickpeas or beans, grated carrot, onion, garlic, and flax egg. Add breadcrumbs, nutritional yeast (if using), paprika, cumin, salt, and pepper. Mix well until the mixture holds together when pressed.

Form the patties:
Scoop about 2 tablespoons of the mixture and form into small patties. You should get 8–10 patties.

Cook the patties:
Heat a nonstick skillet over medium heat with a little oil. Fry patties for 3–4 minutes per side, or until golden brown and crispy.

Drain and serve:
Transfer to a paper towel-lined plate to remove excess oil. Serve warm with your favorite dip, salad, or as a burger.
