Prepare the chicken: If you're using fresh chicken breast, cook and shred it. You can also use rotisserie chicken for a quicker option.
Cook the onions and garlic: In a large pot, sauté the diced onion and minced garlic over medium heat until the onion is translucent and fragrant, about 4-5 minutes.
Add the soups and broth: Stir in the cream of chicken soup, cream of mushroom soup, and chicken broth. Bring the mixture to a simmer, stirring occasionally.
Add the cream cheese: Once the soup is simmering, add the cubed cream cheese. Stir continuously until the cream cheese melts and the soup becomes smooth and creamy.
Add the chicken and bacon: Stir in the shredded chicken and crumbled bacon (or bacon bits). Continue to simmer for an additional 10-15 minutes to let the flavors meld together.
Taste and adjust seasoning: Taste the soup and season with salt and pepper as needed.
Serve: Ladle the soup into bowls and serve hot. For extra flavor, top with additional crumbled bacon or fresh herbs, if desired.
