Condensed Milk & Cinnamon Doughnut Puffs (Melktert Bombs)

Make the Dough: In a large mixing bowl, sift together the cake flour, baking powder, salt, and sugar. Add the milk and melted butter. Stir until a soft dough forms. Knead lightly until smooth (about 2-3 minutes).

Shape the Puffs: Pinch off small pieces of dough and roll them into smooth balls, about the size of a walnut.

Heat Oil: In a deep pot, heat oil over medium heat to 350°F (175°C). Fry the dough balls in batches, turning occasionally until golden brown and cooked through (about 3-4 minutes). Do not overcrowd the pot.

Drain and Fill: Remove from oil and drain on paper towels. Once cool enough to handle, use a piping bag fitted with a small nozzle to inject each puff with condensed milk.

Coat: In a shallow bowl, mix cinnamon and sugar. Roll the warm, filled puffs in the mixture until fully coated.
