Prepare the Filling:
In a pan over medium heat, cook the diced bacon until crispy. Remove from the pan and set aside to cool.
In the same pan, sauté the chopped spring onion until soft and fragrant. Set aside to cool.
Prepare the Pastry:
Preheat the oven to 375°F (190°C) and grease a baking sheet with butter.
Roll out the puff pastry on a floured surface to form a large rectangle.
Assemble the Snails:
Spread a thin layer of tomato sauce over the puff pastry, leaving about 1 inch on the edges.
Evenly sprinkle the cooked bacon, sautéed spring onions, and grated Parmesan cheese over the tomato sauce.
Season the filling with salt, pepper, and sweet paprika.
