Rinse the cherry tomatoes, cucumber, and red onion. Slice the tomatoes in half, slice the cucumber and onion thinly, and layer them into a clean glass jar. Add any optional ingredients you like for a custom flavor.
Make the Brine:
In a small saucepan, combine vinegar, water, sugar, and salt. Bring the mixture to a boil, stirring to dissolve the sugar and salt completely.
Pickle It Up:
Carefully pour the hot brine over the veggies in the jar until they’re fully submerged. Use a spoon to press the veggies down if needed.
Seal and Chill:
Seal the jar tightly with a lid and let it cool to room temperature. Once cool, refrigerate for at least 24 hours to let the flavors develop.
