In a large bowl, mix together the flour, sugar, yeast, cinnamon, nutmeg, and salt.
Add the warm milk, melted butter, and egg, and stir until combined. Knead the dough for about 5-7 minutes until it’s smooth and elastic.
Fold in the raisins or currants, making sure they’re evenly distributed throughout the dough.
Let the Dough Rise:
Cover the dough with a clean kitchen towel or plastic wrap and let it rise in a warm place for about 1 hour, or until it has doubled in size.
Shape & Bake:
After the dough has risen, punch it down to release any air bubbles. Divide the dough into 12 equal portions and shape them into buns.
Place the buns on a baking sheet lined with parchment paper, making sure they are close together but not touching. This helps them rise upward rather than spreading out.
For the cross: In a small bowl, mix the 1/4 cup flour with 3 tbsp of water to create a thick paste. Use a piping bag or a plastic sandwich bag with the tip cut off to pipe the paste in a cross shape on top of each bun.
Let the buns rise for another 30 minutes while you preheat your oven to 375°F (190°C).
Bake:
Bake the buns in the preheated oven for 20–25 minutes, or until golden brown on top and cooked through.
Glaze:
While the buns are baking, prepare the glaze by simmering 2 tbsp of sugar with 2 tbsp of water until the sugar dissolves.
Once the buns are out of the oven, brush them with the warm glaze to give them a shiny, sweet finish.
