60ml (¼ cup) olive oil
45ml (3 tablespoons) honey
60ml (¼ cup) lemon juice
Zest of 1 lemon
1 clove garlic, finely minced
10ml (2 teaspoons) cumin seeds, toasted
½ teaspoon fennel seeds, toasted
1½ teaspoons ground coriander
½ - 1 teaspoon dried red chili flakes (to taste)
A pinch of saffron threads, steeped in 1 tablespoon hot water
1½ teaspoons sea salt flakes
Freshly ground black pepper

2.5 - 3kg leg of lamb (preferably free-range)
3 red onions, peeled and cut into wedges
1 garlic bulb, halved

125ml (½ cup) chicken stock
