Salmon Chowder Soup

In a pot, melt butter over medium heat. Add the chopped onion and minced garlic, and cook until softened, about 3-5 minutes.

Thicken the Soup
Stir in the flour and cook for 1-2 minutes, allowing it to form a roux and thicken slightly.

Add Stock & Potatoes
Pour in the chicken stock and add the diced potatoes. Bring the soup to a simmer and cook until the potatoes are tender, about 10-15 minutes.

Cook the Salmon
Add the salmon fillets into the soup, breaking them apart with a spoon as they cook. Let the salmon cook for about 5 minutes, or until it flakes easily.

Finish with Cream & Dill
Stir in the heavy cream and fresh dill. Season with salt and pepper to taste.

Serve
Ladle the soup into bowls, garnishing with extra dill if desired. Enjoy warm and comforting!
