Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish and set aside.
Brown the beef: In a large skillet over medium heat, cook the ground beef until no longer pink. Drain any excess grease.
Caramelize the onions: Add the sliced onion to the skillet with the beef and sauté for 5–7 minutes, until soft and golden.
Build flavor: Stir in the beef broth, Worcestershire sauce, garlic powder, thyme, salt, and pepper. Let the mixture simmer for 5 minutes to deepen the flavor.
Combine: In a large mixing bowl, toss the cooked egg noodles with sour cream and half of the shredded Swiss cheese.
Mix: Add the beef and onion mixture to the bowl and stir until everything is evenly coated.
Assemble: Pour the mixture into the prepared baking dish. Top with the remaining Swiss cheese, mozzarella cheese, and finally the French fried onions.
Bake: Place in the oven and bake uncovered for 25–30 minutes, or until the cheese is melted and the top is golden and crispy.
