Mandarin Cream Puff Pastry Delight

Step 1: Prepare the Mandarin Custard Filling
1️⃣ In a medium saucepan, whisk together the egg yolks, vanilla sugar, and regular sugar.
2️⃣ Add the mandarin juice and zest to the mixture. Stir in the cornstarch and mix until well combined.
3️⃣ Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens to a custard-like consistency. This should take about 5-7 minutes.
4️⃣ Once thickened, remove from heat and allow it to cool slightly before transferring it to a bowl. Let it chill in the fridge until it reaches room temperature or is slightly cold.

Step 2: Bake the Puff Pastry
1️⃣ Preheat the oven to 400°F (200°C).
2️⃣ Roll out your puff pastry sheet and cut it into squares or rounds, depending on your preference.
3️⃣ Place the puff pastry pieces on a baking sheet lined with parchment paper and bake for about 12-15 minutes, or until golden and puffed.
4️⃣ Once baked, remove from the oven and let the pastries cool on a wire rack.

Step 3: Assemble the Delight
1️⃣ Once the puff pastry and custard have cooled, carefully slice the puff pastry in half horizontally.
2️⃣ Spoon or pipe the chilled mandarin custard filling onto the bottom half of each puff pastry.
3️⃣ Gently place the top of the puff pastry back on, creating a sandwich.
