Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal.

Prepare the Banana Mixture:

In a large bowl, mash the ripe bananas with a fork until smooth, leaving a few chunks for texture if you prefer.

Mix the Dry Ingredients:

In a separate bowl, combine the all-purpose flour, baking soda, and salt. Stir to combine.

Combine the Wet Ingredients:

Add the brown sugar, melted butter (or oil), and egg (or flaxseed egg) to the mashed bananas. Stir in the vanilla extract if using.

Combine Wet and Dry Ingredients:

Gradually add the dry ingredients into the wet ingredients, mixing until just combined. Be careful not to over-mix.

Pour into Pan:

Pour the batter into the prepared loaf pan, spreading it out evenly.

Bake:

Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with just a few crumbs. The top should be golden brown and slightly cracked.

Cool:

Allow the banana bread to cool in the pan for about 10 minutes, then remove from the pan and transfer to a wire rack to cool completely.
