Prepare the Vegetables and Chicken: Start by grating the potatoes, carrot, zucchini, and chopping the onion, garlic, and bell pepper. Dice or thinly slice the chicken fillets into bite-sized pieces.
Make the Mixture: In a large bowl, crack the eggs and add ½ tsp salt and black pepper to taste. Mix the eggs well. Add the grated vegetables (potatoes, carrot, zucchini), diced bell pepper, garlic, chopped onions, and the chicken. Mix everything together. Add in the grated cheese and dried oregano for extra flavor.
Cook the Patties: Heat 2 tablespoons of vegetable oil in a skillet over medium heat. Form small patties from the mixture and place them in the skillet. Fry them for about 3-4 minutes on each side, or until golden brown and crispy. You may need to cook the patties in batches depending on the size of your skillet.
Prepare the Sauce (Optional): In a separate pan, heat a tablespoon of olive oil. Add the diced tomato and cook for 2-3 minutes until softened. Season with a pinch of salt, pepper, and a little extra oregano. This will be a fresh topping for your patties.
Serve: Once the patties are cooked, remove them from the skillet and place them on a plate lined with paper towels to absorb excess oil. Drizzle with olive oil for added flavor, and top with the fresh tomato sauce if desired.
