Grate the zucchini and set it aside for 15 minutes. Squeeze out the excess juice after resting.
Grate the potatoes, rinse them well, and drain thoroughly.
Fry the Vegetables:
Heat vegetable oil in a pan, fry the onion for 2-3 minutes.
Add the carrot and fry for another 5 minutes.
Add the red peppers and fry for 3-5 minutes more.
Combine Ingredients:
Mix the grated potatoes with the zucchini.
Add the fried vegetables, canned corn, chopped spring onions, parsley, eggs, salt, and pepper. Stir well.
Add the flour and mix everything together.
Prepare for Baking:
Grease a baking tray with vegetable oil. Pour the vegetable mixture into the tray.
Preheat the oven to 200°C (390°F) and bake for 30 minutes.
Top with Cheese:
After 30 minutes, sprinkle grated cheese on top of the dish.
Return to the oven for another 5 minutes or until the cheese is golden and melted.
Prepare the Sauce:
In a small bowl, combine 4 tbsp sour cream, minced garlic, and chopped dill.
Serve the baked delight with the garlic dill sour cream sauce.
