The Black Forest Cake, known as Schwarzwälder Kirschtorte in German, is a beloved classic dessert from the heart of Germany. Its rich layers of chocolate sponge cake, whipped cream, cherries, and a splash of Kirsch (a cherry schnapps) come together to create a harmonious combination of flavors and textures. Ingredients:
For the Sponge Cake:

200g (7oz) all-purpose flour

50g (1.75oz) cocoa powder

1 ½ tsp baking powder

1 tsp baking soda

4 large eggs

200g (7oz) granulated sugar

1 tsp vanilla extract

100ml (3.4oz) milk

100g (3.5oz) butter, melted

1 pinch of salt

For the Filling:

500ml (17fl oz) heavy cream

2 tbsp powdered sugar

1 tsp vanilla extract

1 jar of sour cherries (about 350g / 12oz), drained and juice reserved

100ml (3.4oz) Kirsch (cherry schnapps) or cherry juice for a non-alcoholic version

For the Decoration:

Shaved or grated chocolate

Whole cherries for garnish

Optional: Fresh mint leaves for decoration
