Cheesy Potato Casserole: Super Easy & Creamy Potato Side Dish

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Prepare the Potatoes: Toss the potato wedges in olive oil, salt, black pepper, red pepper powder, and Italian herbs. Spread them in a single layer on the prepared baking sheet.

Bake the Potatoes: Bake the potatoes in the preheated oven for about 30-35 minutes, or until they are golden and crispy on the outside, and tender on the inside.

Make the Cheese Sauce: While the potatoes are baking, melt the butter in a saucepan over medium heat. Add the flour and whisk constantly for 1-2 minutes to form a roux.

Add Milk and Cheese: Gradually whisk in the milk until the sauce thickens, about 3-5 minutes. Stir in the cheddar cheese and Parmesan cheese, and continue stirring until the cheese is melted and the sauce is smooth. Season with salt, pepper, and garlic powder.

Assemble the Casserole: Once the potatoes are done baking, transfer them to a large casserole dish. Pour the cheese sauce over the potatoes and toss to coat evenly.

Final Bake: Return the casserole to the oven and bake for another 10-15 minutes, until the cheese is bubbly and slightly golden.
