Preheat your oven to 400°F (200°C).
Wash and scrub the baking potatoes, then dry them thoroughly.
Pierce each potato a few times with a fork to allow steam to escape.
Rub each potato with olive oil and sprinkle with a little salt.
Place the potatoes on a baking sheet and bake for 45-60 minutes, or until tender when pierced with a fork.
2️⃣ Prepare the Sausage and Filling:
While the potatoes bake, heat a skillet over medium heat and add a little olive oil.
Add the sliced sausage and cook until browned and crispy, about 5-7 minutes. Remove from the skillet and set aside.
In the same skillet, sauté the onion and garlic until softened, about 3-4 minutes.
Add the cooked sausage back into the skillet with the onions and garlic. Stir in the paprika, garlic powder, black pepper, and a pinch of salt. Set aside.
3️⃣ Prepare the Potato Filling:
Once the potatoes are cooked, cut a slit down the center of each potato and carefully scoop out the flesh into a large bowl, leaving a thin layer around the edges.
Mash the potato flesh with a fork or potato masher until smooth.
Stir in the cream cheese, sour cream, and half of the cheddar cheese until well combined.
4️⃣ Stuff the Potatoes:
Add the sausage and onion mixture to the mashed potato filling and stir to combine.
Spoon the sausage-filled mashed potatoes back into the hollowed-out potato skins, packing them in gently.
Top each potato with the remaining shredded cheddar cheese.
5️⃣ Bake the Stuffed Potatoes:
Place the stuffed potatoes back on the baking sheet.
Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
