Spicy Jalapeño Popper Stuffed Meatballs

In a large bowl, combine the ground beef, breadcrumbs, egg, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until all ingredients are evenly incorporated.

Prepare the Jalapeño Popper Filling:

In a separate bowl, mix the cream cheese, shredded cheddar cheese, chopped jalapeños, and cilantro (if using). Stir until the filling is smooth and well combined.

Form the Meatballs:

Take a small amount of the meatball mixture and flatten it into a small patty. Place about a teaspoon of the jalapeño popper filling in the center. Carefully fold the meat around the filling and roll it into a ball. Repeat until all the meatball mixture and filling are used.

Cook the Meatballs:

Preheat the oven to 375°F (190°C). Arrange the stuffed meatballs on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until the meatballs are fully cooked through and browned on the outside.

Serve:

Serve the meatballs with marinara sauce on the side for dipping, or drizzle with hot sauce for an extra spicy kick.
