Season the pork chops generously with salt, pepper, onion powder, and garlic powder on both sides.
Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the pork chops and cook for 4-5 minutes on each side, until browned and crispy. Remove from the skillet and set aside.
Make the Gravy:
In the same skillet, add a bit more oil if needed, and sprinkle in the flour. Stir constantly for 1-2 minutes to create a roux (thickening agent).
Slowly add the chicken broth while stirring to prevent lumps from forming. Bring to a simmer, allowing the gravy to thicken.
