Heat olive oil in a skillet over medium heat. Add the thinly sliced onions and cook, stirring occasionally, for 15-20 minutes until they’re soft, golden brown, and caramelized. Set aside.
Prepare the Beef Patties:
Divide the ground beef into 4 equal portions and shape them into burger patties. Season with salt, pepper, and a little garlic powder if you like.
Heat a grill pan or skillet over medium-high heat. Once hot, cook the patties for 3-4 minutes on each side, or until cooked to your desired level of doneness.
Assemble the Patty Melts:
While the patties are cooking, butter one side of each slice of rye bread. Once the patties are done, set them aside to rest.

Place a slice of Swiss cheese on each of the toasted bread slices. Add the cooked patty on top of the cheese. Then layer with a generous portion of caramelized onions.
Top the patty with another slice of cheese, and then top with another slice of toasted bread.

Grill the entire sandwich in the skillet over medium heat for another 2-3 minutes per side, pressing lightly with a spatula until the bread is golden brown and the cheese is melted.
Serve:
Remove from the pan and cut in half. Serve immediately, with a side of crispy fries or pickles if desired.
