Tandoori Chicken Recipe

Prepare the chicken: Wash the chicken pieces thoroughly and make deep slits in them. This helps the marinade penetrate the meat for better flavor.

Marinate: In a bowl, mix lemon juice, salt, and red chili powder. Rub this mixture all over the chicken, making sure it gets into the slits.

Rest: Let the chicken rest for 20 minutes to allow the first marinade to work its magic.

2️⃣ Second Marinade:
Mix the marinade: In a separate bowl, combine yogurt, ginger-garlic paste, turmeric, red chili powder, cumin powder, coriander powder, garam masala, mustard oil, lemon juice, and red food color (if using).

Coat the chicken: Coat the chicken thoroughly with this second marinade. Ensure the marinade gets into all the slits for maximum flavor.

Refrigerate: Cover the bowl and refrigerate the marinated chicken for at least 4 hours, or overnight for the best flavor.

3️⃣ Cooking the Chicken:
🔥 Oven Method:

Preheat the oven to 220°C (425°F).

Place the marinated chicken on a foil-lined baking tray.

Bake: Cook for 20-25 minutes, then turn the pieces and bake for another 10 minutes until slightly charred.

Optionally, baste the chicken with butter or oil halfway through for a juicier texture.
