Sweet and Spicy Mango Chicken

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.

Cook the Chicken: Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-7 minutes per side, or until golden brown and cooked through (internal temperature of 165°F). Remove the chicken from the skillet and set aside.

Prepare the Sauce: In the same skillet, add the grated ginger, garlic powder, honey, soy sauce, and Sriracha. Stir to combine and let the sauce simmer for 2-3 minutes until it thickens slightly.

Add the Mango: Add the diced mango to the skillet, stirring gently to coat the mango in the sauce. Cook for 2-3 more minutes until the mango softens slightly but still holds its shape.

Combine: Return the cooked chicken to the skillet and spoon the mango sauce over the top. Cook for an additional minute to allow the chicken to absorb the flavors.

Serve: Remove from heat and drizzle with fresh lime juice. Garnish with fresh cilantro.
