Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin with oil or line with silicone muffin cups.
Step 2: Prepare the Egg Mixture
In a large bowl, whisk together the eggs, milk (or cream), salt, pepper, garlic powder, and paprika until well combined.
Step 3: Add the Fillings
Evenly divide the chopped sausage and mixed veggies among the muffin cups.
Pour the egg mixture over the fillings, filling each cup about ¾ full.
Sprinkle shredded cheese on top.
Step 4: Bake the Muffins
Bake for 18-20 minutes, or until the egg muffins are set and slightly golden on top.
Let them cool in the pan for a few minutes before removing.
