Preheat your oven to 350°F (175°C).
Grease and line a 9-inch round or square cake pan with parchment paper for easy removal.
Step 2: Mix the Wet Ingredients
In a large mixing bowl, mash the ripe bananas until smooth.
Add the eggs, vanilla extract, melted butter or coconut oil, and honey (or maple syrup). Whisk everything together until well combined.
Step 3: Add the Dry Ingredients
In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using).
Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Be careful not to overmix.
Step 4: Bake the Cake
Pour the batter into the prepared cake pan and spread it out evenly.
Bake for 25–30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Step 5: Cool and Serve
Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
Once cooled, dust with powdered sugar and garnish with sliced bananas, berries, or a dollop of whipped cream or Greek yogurt, if desired.
