In a large mixing bowl, combine the ground meat, chopped spinach, garlic, breadcrumbs, egg, Parmesan cheese, Italian seasoning, salt, and pepper. Mix until just combined; avoid overmixing to keep the meatballs tender.
Step 2: Shape the Meatballs
Take about 2 tablespoons of the meat mixture and flatten it slightly in your hand.
Place a mozzarella ball or cube in the center and wrap the meat mixture around it, ensuring the cheese is fully enclosed. Roll into a smooth ball. Repeat with the remaining mixture and mozzarella.
Step 3: Cook the Meatballs
Heat olive oil in a large skillet over medium heat. Add the meatballs in batches, ensuring not to overcrowd the pan.
Cook for 4–5 minutes per side until browned and fully cooked through (internal temperature of 165°F/74°C).
Optional: For extra flavor, simmer the cooked meatballs in marinara sauce for 5–10 minutes.
