Healthy Oatmeal and Zucchini Bites: Clean Eating, Flour-Free Goodness

Grate the zucchinis using a box grater or food processor. Once grated, use a clean kitchen towel or paper towels to squeeze out any excess moisture from the zucchini. This will prevent the bites from being too soggy.
Step 2: Mix the Wet Ingredients
In a large mixing bowl, combine the applesauce, almond or peanut butter (if using), honey or maple syrup (if desired), and vanilla extract. Stir until the mixture is smooth and well combined.
Step 3: Combine the Dry Ingredients
In a separate bowl, mix together the rolled oats, cinnamon, salt, baking soda, and any optional seeds or dried fruit you plan to add.
Step 4: Add the Zucchini
Add the grated zucchini to the wet ingredients and mix well to incorporate.
Step 5: Mix Everything Together
Gradually add the dry ingredient mixture into the wet mixture, stirring until everything is fully combined. The dough should be thick and sticky.
Step 6: Form the Bites
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Scoop small portions of the dough (about 1 tablespoon each) and roll them into balls or shape them into small bites, then place them on the prepared baking sheet, spaced about 2 inches apart. You can also flatten them slightly for a more cookie-like shape.
Step 7: Bake
Bake in the preheated oven for 15-18 minutes, or until the bites are golden brown on the edges and firm to the touch.
Step 8: Cool and Serve
Let the oatmeal and zucchini bites cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Serve and enjoy as a healthy snack or breakfast option!
