Garlic Butter Steak and Potatoes Skillet: A One-Pan Delight

Wash and scrub the baby potatoes, then cut them into halves or quarters.
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the potatoes and season with salt and pepper.
Cook the potatoes for about 8-10 minutes, stirring occasionally, until they are golden and crispy on the outside and tender inside. Remove them from the skillet and set them aside.
Step 2: Cook the Steaks
In the same skillet, add 2 tablespoons of olive oil over medium-high heat.
Season the steaks generously with salt and pepper on both sides.
When the skillet is hot, add the steaks and sear them for about 4-5 minutes per side for medium-rare (or adjust time for your desired doneness).
Once cooked to your liking, remove the steaks from the skillet and let them rest for a few minutes before slicing.
Step 3: Make the Garlic Butter Sauce
In the same skillet, reduce the heat to medium and add the butter. Let it melt, then add the minced garlic, thyme, and rosemary (if using).
Cook for about 1-2 minutes, stirring frequently, until the garlic becomes fragrant and golden.
Once the garlic butter sauce is ready, add the cooked potatoes back to the skillet, tossing them to coat in the butter and herbs.
Step 4: Assemble and Serve
Slice the rested steak against the grain into thin strips.
Add the sliced steak back into the skillet with the potatoes, tossing everything together gently to combine.
Garnish with fresh parsley and serve hot!
