If using fresh spinach, heat the olive oil in a medium skillet over medium heat. Add the chopped spinach and sauté for 2-3 minutes, or until wilted and cooked down.
If using frozen spinach, make sure it is thawed and well-drained. Set aside.
Step 2: Combine the Dip Ingredients
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the softened cream cheese, mayonnaise, sour cream, Parmesan, mozzarella, and Asiago (if using). Stir until smooth and well combined.
Add the sautéed spinach and chopped artichokes to the bowl. Mix in the garlic powder, onion powder, salt, and pepper. Stir until everything is evenly combined.
Step 3: Bake the Dip
Transfer the dip mixture into a baking dish (such as a 9x9-inch square dish or a shallow 1.5-quart casserole dish). Smooth the top with a spatula.
Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly. If you want a crispier top, broil for an additional 2-3 minutes (watch carefully to avoid burning).
Step 4: Serve
Let the dip cool for a few minutes before serving.
Serve with your choice of crackers, pita chips, or fresh vegetables for dipping.
