In a medium bowl, combine the soy sauce, gochujang, honey (or brown sugar), rice vinegar, sesame oil, garlic, and grated ginger. Whisk everything together until smooth and well combined. The gochujang adds that signature spicy kick, while the honey or brown sugar balances it with sweetness.
Marinate the Chicken:
Place the chicken breasts or thighs in a shallow dish or a zip-top bag. Pour the marinade over the chicken, making sure it’s well-coated. Seal the dish or bag and refrigerate for at least 1 hour, or preferably overnight for maximum flavor absorption.
Cook the Chicken:
Heat the vegetable oil in a skillet or grill pan over medium heat. Once hot, add the marinated chicken. Cook the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through. If you prefer grilling, preheat the grill and cook the chicken for 5-6 minutes per side, depending on thickness.
Garnish and Serve:
Once the chicken is cooked, remove it from the pan or grill and let it rest for a few minutes. Slice the chicken into strips or serve whole, then sprinkle with sesame seeds and chopped green onions for a fresh, crunchy garnish.
Enjoy:
