Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish with butter or cooking spray.
Mix the Dry Ingredients:
In a large mixing bowl, combine the sugar, flour, salt, and baking powder. Stir well to combine.
Add the Wet Ingredients:
Add the melted butter, milk, vanilla extract, and eggs to the dry ingredients. Whisk until the mixture is smooth and well combined.
Add the Coconut and Nuts:
Stir in the shredded coconut and nuts (if using). The mixture will be quite thin, but this is normal—it’s part of the magic of Impossible Pie!
Pour Into Pie Dish:
Pour the mixture into the prepared pie dish. Don’t worry about spreading it out—just pour and let the ingredients work their magic during baking.
Bake the Pie:
Bake for 45-50 minutes, or until the top is golden brown and a knife inserted into the center comes out clean. The pie will form a crust as it bakes, so don’t worry if it looks a bit jiggly when you first put it in the oven.
Cool and Serve:
Let the Impossible Pie cool completely before serving. Once cooled, sprinkle with a little ground cinnamon if desired for an extra touch of flavor.
