In a small bowl, combine the warm milk (about 110°F/43°C) and sugar. Sprinkle the yeast over the top and stir gently. Let it sit for 5-10 minutes until it becomes foamy.
Prepare the Dough:
In a large bowl, combine the flour and salt. Create a well in the center, and pour in the yeast mixture, melted butter, and vanilla extract. Add the eggs and mix until the dough starts to come together.
Knead the dough on a floured surface for about 5-7 minutes until it’s smooth and elastic.
Let the Dough Rise:
Place the dough in a greased bowl and cover with a clean kitchen towel. Let it rise in a warm place for about 1-1.5 hours, or until it has doubled in size.
Shape the Donuts:
Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out to about 1/2-inch thickness. Use a donut cutter (or two round cutters of different sizes) to cut out donut shapes. You can also use a glass and a small round cutter to make the center hole.
Place the shaped donuts on a parchment paper-lined baking sheet and let them rise again for 30 minutes.
Fry the Donuts:
Heat vegetable oil in a large pot or deep fryer to 350°F (175°C). Fry the donuts in batches, about 2-3 at a time, for 1-2 minutes on each side, or until golden brown. Use a slotted spoon to remove the donuts from the oil and place them on a paper towel-lined plate to drain excess oil.
Make the Glaze:
In a small saucepan, combine the powdered sugar, milk, vanilla extract, and salt. Heat over low heat, whisking until smooth and slightly warm.
Glaze the Donuts:
Dip the hot donuts into the glaze, making sure they’re fully coated. Let the excess glaze drip off and place the glazed donuts on a cooling rack to set.
