In a medium-sized bowl, combine the cream cheese, mozzarella cheese, Parmesan cheese, garlic powder, onion powder, and cooked spinach. Stir until all ingredients are well mixed. Season with salt and pepper to taste.
Prepare the Puff Pastry:
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
Roll out the puff pastry sheet on a lightly floured surface. Cut the sheet into squares, approximately 2-3 inches in size (you should get about 9-12 squares depending on the size).
Fill and Shape the Puffs:
Spoon a small amount of the spinach and cream cheese mixture into the center of each puff pastry square. Be careful not to overfill to avoid spilling when baking.
Fold the corners of each square towards the center to form a little pouch or triangle. Press the edges lightly to seal the puff.
Bake the Puffs:
Place the filled puffs on the prepared baking sheet. Lightly brush the tops with olive oil to give them a golden, crispy finish while baking.
Bake in the preheated oven for 15-20 minutes, or until the puff pastry is golden brown and crispy.

Once baked, remove the puffs from the oven and let them cool slightly before serving. Garnish with fresh parsley or chives if desired.
