In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, onion, egg, garlic, oregano, salt, and pepper. Mix until everything is evenly incorporated.
Using your hands, roll the mixture into 1-inch meatballs and set them aside.
Cook the Meatballs:
Heat the olive oil in a large skillet over medium heat. Add the meatballs in batches and cook, turning them occasionally, until they are golden brown on all sides and cooked through (about 8-10 minutes). Remove the cooked meatballs from the skillet and set aside.
Make the Cranberry Sauce:
In the same skillet, combine the cranberry sauce, honey, Dijon mustard, apple cider vinegar, and red pepper flakes (if using). Stir to combine and bring the sauce to a simmer over medium heat. Let it cook for about 5-7 minutes, until it thickens slightly.
Coat the Meatballs:
Add the cooked meatballs back into the skillet with the cranberry sauce. Stir gently to coat each meatball in the sauce. Let them simmer for an additional 5 minutes to allow the flavors to meld together.
Serve and Enjoy:
Once the meatballs are fully coated in the sauce, serve them warm as an appetizer or over rice for a delicious main dish. Garnish with fresh parsley if desired.
